Quality over quantity — we make only a few things, but we do them slowly and carefully. It all begins with the morning's fresh milk.

Whole-milk curd, churned on a wooden bilona while the farm is still dark, then simmered slow over a low flame. Grainy, golden, and fragrant enough to find from the next room.
We press it the old-fashioned way, on a wooden ghani, keeping the heat low so nothing good gets lost. The result is raw, unrefined oil, full of natural nutrients — just as it should be.

Ours is a small family farm at the edge of the Gir, where our forty-odd cows have names, moods, and favourite trees. They are indigenous Gir cows — the domed forehead, the long swinging ears — a breed that has given this land its milk for centuries.
Gir cows give A2 milk: a single, older form of the beta-casein protein, the one Indian homes were raised on before crossbred herds changed what came in the pouch. Many people who find ordinary milk heavy tell us ours is the first they have enjoyed in years.
We don't push our cows, and we don't pool our milk. The calves drink first — always — and what remains is yours, within hours, exactly as it left the udder.

The Bilona Method
Factory-made ghee is made from cream because it's quicker. Ours starts with curd made from whole milk, because that's the traditional method — passed down through the shastras (ancient texts) and our grandmothers. It takes 30 litres of milk to make just 1 litre of our bilona ghee.
Step 1
We culture full-cream A2 milk into thick curd overnight — the Vedic way starts with dahi, never cream.
Step 2
The wooden bilona turns slowly, rope over rope, while the farm is still waking up.
Step 3
White butter gathers on top, scooped out by hand the moment it forms.
Step 4
The makkhan melts over a gentle flame until the solids toast and the kitchen smells of it.
Step 5
Strained while warm into glass jars — grainy, amber, and gone too quickly.
Farm to home

Yes — with care, and we take a lot of it. Our milk is chilled to 4°C within minutes of milking, bottled in sterilised glass, and delivered within hours. Every batch is tested before it leaves the farm. We still recommend a gentle boil at home before drinking, exactly as Indian kitchens always have.
